Oatmeal Cookie Ice Cream Sandwiches

These deliciously adorable ice cream sandwiches cookies are a perfect picnic/backyard party dessert. The recipe can be found at HalfBakedHarvest.com. I filled with Chocolate Chip Cookie Dough Ice Cream - I did not make from scratch as in the recipe. I wrapped each individually for easier handling. They were a tasty bite leaving more than enough room for another dessert for two. A very fun dessert and party pleaser!
