Sour-Cream-and-Onion Tortilla Espanola

This recipe is from Bon Appetit February 2025. This is a traditional Spanish tapa with a twist. In this version instead of thinly sliced raw potatoes, sour cream and onion potato chips are used. It is a wonderful appetizer (gluten-free!) or can be a great easy dinner with a green salad and crusty loaf of bread. The substitution of potato chips for raw potatoes made this especially quick and easy. It is sure to be a great hit!
