Saint Patrick's Day 2020

St. Patrick's Day 2020 was a bit subdued. Coronovirus has decreased our interactions for a while to help halt its spread. Carolyn and Ryan went to Rhode Island to visit very ill family. David and Kerry joined us for a celebration dinner, but we all kept our distance.

This year I tried Ina Garten's Irish Soda Bread. It was easy and delicious and similar to my Mom's recipe. What was particularly fun was I looked at my Mom's recipe where there was a cute note: The reason to make a cross in the bread says folklore is to keep the leprechauns away! My only miss from Ina's recipe was the caraway seeds and a few more raisins.


For the corned beef and cabbage, I used Tyler Florence's recipe. What we really enjoyed was the addition of turnips and parsnips to our root vegetables.


Holiday themed, decorated sugar cookies are always a hit in our house.


Traditional Irish Blessing: May the road rise up to meet you. May the wind be always at your back. May the sun shine warm upon your face; the rains fall soft upon your fields and until we meet again, may God hold you in the palm of His hand.
