Grilled Swordfish with Tomatoes and Oregano

So easy - so lovely - a perfect summer night grill dinner! This recipe is from Bon Appetit (my favorite along with Ina Garten) June/July 2019. This works perfectly especially in the summer if you are growing an herb garden and have fresh oregano. So grilling the fish is simple - a little olive oil with salt and pepper. Once grilled, the marinade is poured over the fish and tomatoes and allowed to sit for 15 minutes to an hour. This is a great company dish for those who like swordfish since it can be served at room temperature. No one has to rush.
I made this for Mark's and my 31st anniversary this June. While there was outside dining opening during phase 2 of the Covid-19 pandemic, we decided it would be more relaxing to eat in. It was a beautiful anniversary celebration!
